IF you'd asked for vinegar in your chips in a Leith 'chippy' some years ago, the chances are that it would have been from a bottle labelled Grimble's Malt Vinegar.

Around 1903, the London firm of Grimble rook over the Edinburgh Malt Vinegar Company who then had premises in Ballantyne Road and later moved to Jane Street and many will still remember the large storage tanks and distinctive smell from the area which left you in no doubt that some concoction was being brewed.

The word vinegar comes from the French 'vin aigre' which means sour wine and it was usually made from malted barley and processed in stages somewhat similar to those used in brewing and distilling. Like all good wines, Grimble's of Leith was regarded as the best of quality.
